meatless monday #1 - breakfast

honestly, i'm not much of a breakfast person, but i try to eat something every morning, b/c, you know, it's supposedly the most important part of the day.  if i know i have a busy day ahead, i do almost always try to eat a good breakfast before i get going.  i doubt that many of you eat meat for breakfast on a weekday, unless you stop and pick up a breakfast sammie somewhere?  but, i have a couple suggestions for some quick and easy breakfasts that you can eat at home, or take with you.

- fruit.  it's so easy!  and portable!  if i wake up feeling less than stellar, then fruit is usually my go-to breakfast.  although, as anyone who knows me well knows, i HATE bananas.  i'd rather get my potassium from an avocado.  they have more than a banana anyway.  i digress....  but, fruit is great for your body, your energy, and for helpin' you poop.  (you'll find that's a big reason for me to eat a lot of things.)  it can be as simple as an apple, or try cutting up a few of your favorites and making a quick, little fruit salad to take along!  tim makes green smoothies every morning, which is usually kale mixed with whatever fruit we have on hand.  that's a little intense for me.  but sometimes, if i'm feelin' smoothie-ish, i'll mix together berries, an apple, and a peach or something, and that's perfect for me.  it's surprising how filling fruit really is!

- cereal and soy milk - ok, so you don't have to use soy milk, but it might be worth a try if you've never had it!  the vanilla soy milk goes really well with a lot of cereals.  i try to watch my sugar intake, and most cereals have sugar in them.  i stick with trader joe's brand joe's o's, b/c there's only 1 gram of sugar, but that's a little bland and boring.  i recommend some of the kashi brand cereals.  they do have sugar in them, but it's less than most, and they are tasty, and i know i'm getting good ingredients.

- hot cereal - not instant!  there is something to be said about a nice hot bowl of cereal in the morning, and they don't all take a long time to cook!  i usually make either the trader joe's brand steel cut oats, bob's red mill 5 or 10 grain cereals, or even just quick cook oats!  whichever one i make, i usually put in a little bit o' vegan butter, a drizzle of maple syrup, and whatever fresh fruit i have on hand.  blueberries are my fav.  sometimes i'll even throw some sunflower kernels in too!

- lara bar - if i'm on the go, like i have an early dr.'s appt. or something, i usually take a lara bar along with me.  they are just simple and yummy.  nuts, dates, and dried fruit, no added ingredients.  peanut butter cookie is my favorite, b/c it tastes just like one!  
             

well, those are just suggestions.  obviously, if you have your own morning routines, like yogurt, eggos, etc., than just tell me to suck it, and enjoy!  just figured i'd throw some other stuff at ya.
